Summer is upon us which typically means moms are putting their crockpots and hot soup recipes under their kitchen cabinets for hibernation.
Good news soup lovers, you don’t have to give up the goodness! Yes, there is such thing as “cold soup” and yes, it is delicious!
This recipe is filled with ingredients you already have in your home and is great for glowing skin!
- 3 ripe avocados
- 4 cups organic bone broth
- 2 tbsp crushed garlic
- 1 tsp fresh ginger
- 1 tsp. Himalayan sea salt
- 1 tablespoon apple cider vinegar
- 1/2 cup fresh parsley
- 1/2 lemon(peel and all)
Let’s Make It!
- In a blender, combine all ingredients. I use a vitamix on setting 4. If you use a regular blender make sure not to over blend as heating it up will make it too thick.
- Cover and place in your refrigerator to chill.
- Garnish with pumpkin seeds and turmeric if you’d like!
We use bone broth instead of regular chicken broth because of the gelatin which is great for helping you build collagen, the main structural protein found in skin and other connective tissues. As we get older our body slows down, and eventually stops, producing collagen… We can really use all the help we can get to build it up! You can make bone broth or purchase it just check the label and make sure you see it has gelatin!
And we know avocados are extremely nutritiously dense! These green guys pack more potassium than a banana and have a crazy amount of vitamins. They also bring healthy fats to your diets. Yes, we need to eat fats… just healthy ones!
You can call this pretty soup because that’s what it’s going to do for you!
