Preparing vegetable spring rolls


  • 1 organic red bell pepper
  • 1 organic yellow bell pepper
  • 2 cups shredded carrots
  • 10 asparagus spears
  • 2 cups shredded red cabbage
  • 1 organic avocado
  • 1 organic lemon
  • 1 mango
  • 2 tbsp. extra virgin olive oil
  • 1 package of rice wrappers



  1. Slice all ingredients (except the wrappers and lemon) into very thin slices. Place on your preparation mat and keep separated.
  2. Get a shallow pan and fill with warm water.
  3. Juice the lemon over the vegetables, pour EVOO, and sprinkle with salt and pepper.
  4. Place the rice wrapper in shallow bowl and let it soak for 10-15 seconds. Do not let it soak longer than that as it is more likely to break at that point.

So I am always looking for healthy snacks for the kiddos and I had a ton of hemp seeds at home. We also have a ton of eggs  due to the fact that we have 4 chickens in our backyard that lay 4 eggs a day. These took about 5 minutes to prepare and about 7-10 minutes to bake. 3/4 cup of Hemp Seeds

1/2 cup shredded coconut

1/4 cup chia seeds

3 organic eggs

The best snack ever! 1 large egg has 7 grams of protein!

So, I used to hate hard boiled eggs because of the smell….and because I usually saw them in an egg salad of sorts with mayonnaise covering it. I was raised hating mayo and so I still do. I started to eat hard boiled eggs a couple years ago when Chase begged me to try one when we first got married. I fell in love with eating one covered in pepper. Have you ever tried it this way? So, there are all these pictures on Instagram of toast that make me want to eat bread. I have a problem though. When I eat bread, bad things happen to my body. I won’t go into details here in fear of grossing you out! So, I decided to put my new toaster oven to use the other day and came up with these amazing creations. Happy Month of love friends!!! So, when I think about Valentine’s Day, I think about love and you guessed it, CHOCOLATE! My husband thinks it is a Hallmark holiday that is only to increase card sales. I don’t really care why it started, I just love celebrating love!

This year we are actually going to our bible study and eating heart shaped pizza with our friends! I’ll be skipping the pizza and bringing a salad because I’m not a fan of huge commercial chain pizza. I choose my battles wisely. Today I had the pleasure of sharing some healthy meal options for Superbowl parties. I have to be honest I am not a huge NFL fan, but I go to the Superbowl parties to eat and mingle. If you’re anything like me, you always have something going on every weekend. Which means there is always a reason to eat delicious food and “cheat” if you like to call it that. Every winter I swear that I hate the cold and then every summer I swear that I hate the heat.

This winter I have found my happy medium with the cold. I am eating AND drinking everything warm! This soup is a STAPLE in my house right now because of the healing properties in it! Plus, it keeps me warmed up when its chilly outside!
